Sis' Kentucky Wonder Pound Cake

As a little kid I can remember my Grandmother mentioning either Sister or Sis.  Either I was just dense or I was just being a kid, but I never put two and two together that my Grandmother could have a sister.  My Grandmother sister was Earline Eidam.  My earliest memory was visiting her in her apartment home in Columbus.  I remember her coming to Albany for special occasions and she made two things that I can remember.  This cake and one other (a Strawberry cake - that is wonderful).

Now there was a ten year age difference between them.  I was ten when she passed away, and I really never got a chance to really get to know her.  However, I remember talking to my grandmother as I got older and as a young adult.  Her love for her sister was very deep.  A special bond between two sisters.


Ingredients:

2-1/2 cups Self Rising Flour
2-1/2 tsp Cinnamon
4 egg yolks
2 tsp Hot Water
2 cups Sugar
1-1/2 tsp Nutmeg
1 small can of crushed pineapple and juice
1-1/2 cups Crisco Oil
1 cup chopped nuts (have no clue what type - I would assume pecans)

Directions:

Beat egg whites until stiff; add one cup chopped nuts and set aside.  Put rest of ingredients into mixing bowl and when throughly mixed, fold in egg white mixture.  Bake 1 hour and 15 minutes at 350 degrees.

While hot, glaze with 4X sugar and lemon juice.

Better baked day before use.
