Sweet Potato Cake
1-1/2 cups of cooking oil
4 eggs separated
2-1/2 cups sifted flour
1 teaspoon cinnamon
1 teaspoon of nutmeg
1 cup chopped nuts
2 cups of sugar
4 teaspoon hot water
3 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups raw sweet potatoes, grated
1 teaspoon vanilla
Blend sugar and oil. Beat yolks and beat well. Add hot water. Sift dry ingredients together; add to sugar and yolk mixture; beat well, stir in the sweet potatoes, nuts and vanilla. Fold in well beaten (stiff) egg whites. Pour batter into three nine inch layers, and bake 25-30 minutes at 350 degrees.
