Blue Cheese Supreme Sauce

Now this is a delicious sauce that will turn ordinary vegetables into an elegant fare.  Beautiful white heads of cauliflower, bright green broccoli and tender asparagus spears all will be enhanced with the crowning glory.

The flavor accent of this cream sauce is tangy American Blue Cheese.  This peppy specialty cheese lends a nice salt and pepper flavor to vegetables.

After crowning the cooked vegetables with this zippy sauce sprinkle the top with crumbles of American Blue Cheese and buttered bread crumbs colored with a bit of paprika.



2 tablespoons of butter
2 tablespoons of flour
1/4 tablespoon of pepper
1/2 teaspoon of paprika
1 cup of milk
1 egg yolk
2 tablespoon of cream
1/4 cup Parmesan cheese, grated
1/4 cup crumbled American Blue Cheese

Melt the butter over low heat.  Stir in the flour and seasonings.  Slowly stir in milk.  Cook until thickened and smooth.  Beat egg and cream together; add a little of hot cream sauce to the egg mixture.  Then return to the hot cream sauce; mix well.  Serve on hot vegetables.  This can be made ahead of time and reheated in double broiler over hot water.  This yields about 1-1/2 cups.
