1-2-3-4 Peach Crunch Cake



1 cup of shortening
1 teaspoon of salt
1 cup of peach juice or pureed pulp
2 cups of sugar
3 cups of cake flour
3 teaspoons baking powder
4 eggs

Cream Cheese
4-X Sugar

Cream the shortening and sugar; add the eggs which have been beaten thoroughly.  Add the cake flour and peach pulp alternatively.  Bake at 325 in three layers until the cake reaches a consistency that when a toothpick is inserted into the cake comes clean.

Ice the cake with your favorite icing, with toasted pecans, and a half cup of pureed peaches.

A good filling for this cakes combines 4-x sugar and cream cheese.  Make to the consistency that you like.
