Egg and Cheese Egg Rolls with Sausage Gravy

Here is a new spin on serving breakfast, and it is not an ancient Chinese secret....


6 Eggs
Salt & Pepper to taste
Egg roll wrappers
Shredded Cheese

Scramble your eggs and salt and pepper to your own personal taste.  If you really wanted to get creative, you can expanded this by adding your favorite extra ingredients.  Ideas such as ham, sausage, peppers, onions, etc.

Now you got to build your egg roll together.

Egg roll wrappers have a tendency to be a bit dry, so you need to sprinkle with water, and smooth the water out over the wrapper.

Have the wrapper placed on your counter so that it forms the shaped of a diamond. Put your egg or egg mixture in the middle of the wrapper and sprinkle with the shredded cheese.

Begin rolling the egg roll and tuck the bottom under the eggs, bring in the sides and continue rolling.

You are almost to having a yummy breakfast.

You need to have a skillet with approximately an inch of vegetable or canola oil in the pan. Once you have the oil heated, fry the egg rolls until a golden brown.

If you want a healthier option then place them on a non-stick cookie sheet and bake at 325 degrees until brown.

For the sausage gravy you have a couple of options.

Here is the option that I would use:

Brown your favorite ground sausage as normal, and drain the fat.  Use a standard white gravy mix that you can get at the supermarket.  Mix as per the directions and pour over the sausage.  Allow the gravy until you get a nice consistency.

Serve the egg rolls and gravy so that the gravy can be used as a dipping sauce.
